Avial

Popularity: Die hard dish of iyer & iyengar household....Palakkad Iyers top the list with their culinary skills here..

Ingredients :
1.       Chow Chow - 2
2.       Carrot - 3
3.       Beans – ¼ kg
4.       Potato / Seppan kezhangu (Optional) – 1 or 2
5.       Coconut – one half of the broken coconut fully
6.       Green Chillies – 7 to 8=
7.       Salt – As required
8.       Coconut Oil – 2 tsps
9.       Curry Leaves - Few
10.   Curd – 1 to 2 ladles depending on taste
11.   Water

Preparation Procedure:

1.       Cut the Chow Chow, Carrot and beans in to thin rectangular shaped pieces
2.       In a Kadai, add Water and put all the vegetables and add salt and steam them.
3.       Grate the coconut, grind the coconut and green chilly with few curry leaves and little amount of water.
4.       Add the grinded mix to the kadai containing vegetables when the vegatables are 3/4th cooked.
5.       Stir well & Allow this mixture to boil for a few minutes and then add one ladle of curd to the kadai
6.       Stir well and switch off the stove. Add few more curry leaves
7.       Boil 2 tsps of coconut oil and add to the avial.

This can be prepared Solid or Semi Solid as you desire by decreasing or increasing the water quantity while cooking..
